1/2 Syn Cake - Slimming World Recipe

Serves: 4
Prep: 15 mins
Cook time: 10-15 mins
Syns per serving: 1/2 for whole cake!!! (on Extra Easy)

Yes...you have read that right, half a syn for the whole cake! Ok, so it's not like a real sponge, but it does taste nice and once finished does resemble a normal roulade! You can add whichever fruit you like but raspberries and strawberries give a lovely taste and colour.

I, again, came across this recipe at my local slimming world group. The group leader had found it on the internet and printed out some leaflets for the group to try. I have, of course, adapted the recipe to suit me and my cooking skills, so feel free to do the same!

I have made this three times now and I have to say it's fairly simple, and foolproof. I haven't burnt it once...yet! Give it a try and see what you think....

Ingredients:-

4 Eggs
1 x Tub of Quark
3 Tablespoons of Fat Free Yogurt (I use Natural or Vanilla)
1 Teaspoon of Baking Powder
1 Teaspoon Vanilla Extract / Flavouring
4 Tablespoons of Sweetener
Handful of Raspberries and Strawberries (Chop the strawberries into small pieces)

Method:-

Separate the egg whites from the yokes for all four eggs and split into two different bowls.
In the bowl with the yokes add half of the tub of quark, sweetener, vanilla essence and the baking powder and whisk until creamy.
Whisk all of the egg whites until stiff and fold in to the yokes mixture bit by bit gentle.
Line a baking tray with greaseproof paper and spray with fry light to help keep the cake from sticking.
Pour the mixture out onto the tray and pop in oven (at around 170c) for about 10-15 minutes until golden brown.
Once baked remove the paper lining from underneath the cake gentle whilst still warm (but be careful not to do it straight from the oven)
Lay on a cooling rack and allow to cool down for at least 15 minutes.
Mix the remaining quark and yogurt together and add a sprinkling of sweetener.
Spread the mixture on top of the cake ensuring a nice thick layer, go right to edges of the cake.
Layer the fruit on top of the quark mixture and gentle roll the cake up into a roulade.
Cut into pieces to share or save for later...alternatively grab a fork and stuff the lot!!! (Please note: I wouldn't recommend eating the whole lot in one go of course...:)

Diet Coke Chicken - Slimming World Recipe

Serves: 4
Prep: 10 mins
Cook time: 30 mins
Syns per serving: 0 (on Extra Easy)

The infamous Diet Coke Chicken made famous by Slimming World and loved by many dieters around the country. I first found out about this recipe via a lady at my local slimming world group a few years back. I tried it and loved it...so here is my slight adaption of the recipe.

Ingredient's:-

Diced / Sliced Chicken Breast (Enough to feed 4)
Fry light
3 x Bell Peppers (I use Red, Yellow and Orange)
1 Red Onion, finely chopped
2 Garlic Cloves (chopped finely)
2 tsp Worcestershire sauce
4 tbsp tomato purée
1 Carton of Passata
1 tbsp soy sauce
1 tsp dried mixed herbs
Can of Diet Coke or Pepsi (330ml)
Chicken or Vegetable Stock Cube
Sweetcorn (optional but tasty!)

Method:-

Spray a large pan or wok with fry light and set to a high heat. Add the chicken and cook for a few minutes before adding the onions and peppers to brown and soften slightly.
Now add the liquid; passata, tomato puree, soy sauce, Worcestershire sauce and the can of diet coke of course!
Stir thoroughly and add the herbs, garlic and stock cube (crumble this up before adding) and give another good stir.
Bring the mixture to the boil then reduce the heat to a medium setting and cover. Let simmer for about 20 minutes, checking every 5 minutes of so. Continue to simmer until mixture has thickened (sometimes this can take up to 30 mins).
Add the sweetcorn once mixture has thickened and cook for another 2 minutes.
Serve with boiled rice or on top of a Jacket Potato.

This is suitable for freezing, but for best results make sure thoroughly defrosted before reheating again.

Mushy Pea Curry - Slimming World Recipe

Serves: 4
Prep: 10 mins
Cook time: 20 mins
Syns per serving: 0 (on Extra Easy)

Now don't judge a book by it's cover! I know the above recipe doesn't sound like the most appetising thing in the world....but it tastes lovely and is super quick and easy to make.

Ingredients:-

Diced Onions (as many as you like)
Sliced Mushrooms (again, use as many as you like)
2 x Mushy Peas
1 x Baked Beans
2 x Chopped Tomato's
1 Tablespoon Chili powder
1 Heaped Tablespoon of Curry powder
(With the chili and curry powder add to taste, I use mild as I don't like my food too hot)

Method:-

First start by frying the onions and mushrooms until they are golden brown. Use as many or as little onions and mushrooms as you like.

Add the chopped tomato's, baked beans and mushy peas to the pan and stir well.

Add the chili and curry powder to taste. Don't add to much too soon, instead keep adding a little in at a time to ensure you get the perfect taste for you.

This doesn't take long to cook  but I usually give it about 20 minutes on a medium heat on the stove to ensure that all the ingredients really combine with each other.Keep stirring every few minutes as this does have a tendency to stick to the bottom of the pan!

Serve with rice, a jacket potato or slimming chips! Yummy!

To add a little 'meatiness' to this curry try adding in chicken or pork. Or you can blitz the curry with a hand blender and turn into a tasty syn free curry sauce to pour over some slimming world chips. Who needs chips with curry on the market when you have this syn free alternative!

Chilli Con Carne (Simple Version!) - Slimming World Recipe

Chili Con Carne made easy! Perfect for those cold winter evenings with plenty of white rice or a chunky baked potato!

Serves: 4
Prep: 15 mins
Cook time: 3-4 hours (slow cooker - high setting)
Syns per serving: 0 (on Extra Easy)

This is my version of Slimming World's chili con carne, so it's been adapted to suit my tastes and make it very simples! This can be further adapted to suit anyone's taste, and if you don't like chili just minus the chili powder!

Ingredients

Fry Light, for spraying
1 large onion, finely chopped
2 bell peppers, sliced into strips
2 garlic cloves, crushed
2 tsps chili powder (add to taste)
1 tsp ground coriander
1 tsp paprika
A pinch of cayenne pepper
2 x Cans Chopped tomatoes
284ml/½ pint stock
salt and ground black pepper
454g/1lb extra lean beef mince (or Quorn mince)
1 x Can red kidney beans, drained
chopped fresh coriander leaves, to garnish (if you have it handy)
1 level tablespoon of tomato puree

Method (using slow cooker)

Spray a large wok or pan with fry light, set to a medium / high temperature and then add in your extra lean mince or quorn mince.

Switch on your slow cooker so it can be heating up. I usually set it to high until I am happy it's cooked and then, if I need to keep it warm, I simply lower the heat intensity.

Once the mince has browned take out of the pan and lay on a plate covered in kitchen paper, this will allow the juices and any fat to be absorbed into the paper and away from the meat.

Meanwhile set the pan up to a high setting assuring that you have re-spayed the pan with a little more fry-light. Now add in the diced onions and sliced peppers until they have soften considerably. Chuck in the garlic and fry for a couple more minutes.

Now for the easy part...

Once the slow cooker has heated up a little simply add in all remaining ingredients.

Usually I will put the mince in first, along with the fried onions, peppers and garlic, then add the kidney beans and liquids, i.e. stock, chopped tomatoes. Give it a quick stir around and then add in your herbs and spices.

Give it a taste test and add more chili, salt etc as necessary. If you want a really rich chili then add a little passata (which is syn free on EE), but make sure to add less stock as you don't want the consistency to appear too runny!

I leave the slow cooker on a high setting for around 3-4 hours, but this can easily be left for much longer depending on how hungry you are! So this would be a perfect dish to do overnight or whilst at work, simmering away until you get home! Yummy:)

Orange Fanta Chicken - Slimming World Recipe

Serves: 3-4  Prep: 10 mins
Cook time:30-40 mins
Syns per serving: 0 (on Extra Easy)

This recipe was derived from the Diet Coke Chicken Recipe that I was told about in one of my sw group sessions. Being a big fan of sweet and sour chicken I wanted to adapt the recipe using only a few different ingredient's and of course Orange Fanta. So here goes...

Ingredient's:-

Diced Chicken Breast (enough to feed 3-4 people)
2 Carton's of Passata
Diced Onions (red onions taste best with this)
Pineapple Chucks(as many as your like)
3 Sliced Bell Peppers (I used red, orange and yellow to add lots of colour)
1 Tsp Soy Sauce
Fry Light
Can of Fanta Zero (Orange) *Remember to use Zero to keep it syn free!*

Method:-

First, spray a large pan or wok with fry light and set to a medium to high heat.

Add the chicken to the pan until the chicken is just cooked (make sure not to overdo the chicken at this stage).

Add a little more fry light to the pan if needed and add the diced onions and sliced peppers. Keep these in the pan until the peppers have softened and the onions have browned slightly.

Add the passata and soy sauce into the mix, heating this a little before adding in the Fanta Zero.

At this point the mixture will look like a gloopy mess but rest assured it will thicken in time!!

Turn the heat down to a low simmer and leave (covered) for about 30 minutes. Keep checking it as when it does eventually thicken it happens fast!

As soon as the liquid thickens turn off the heat and add the pineapple chucks. Best served immediately with a side of boiled white rice or alternatively you can freeze the dish once cooled to keep as a stock aid in your freezer!

This dish is super simple, cheaply made and tastes delicious! It has a hint of sweet and sour about it and is very filling. Whats more it is completely syn free so if, like me, you like your meals big, then you can have however much of it you like!!

NB. Make sure to add the pineapple right at the end of the cooking process so as not to actually cook the pineapple as this will add syns. If freezing the mixture do not add the pineapple, instead add the pineapple once this has been reheated again. Or alternatively subtract the pineapple altogether, or you can always syn it if you can't go without or don't want the fuss!

Enjoy!
