1/2 Syn Cake - Slimming World Recipe

Syns per serving: 1/2 for whole cake!!! (on Extra Easy)

Yes...you have read that right, half a syn for the whole cake! Ok, so it's not like a real sponge, but it does taste nice and once finished does resemble a normal roulade! You can add whichever fruit you like but raspberries and strawberries give a lovely taste and colour. 

I, again, came across this recipe at my local slimming world group. The group leader had found it on the internet and printed out some leaflets for the group to try. I have, of course, adapted the recipe to suit me and my cooking skills, so feel free to do the same!  

I have made this three times now and I have to say it's fairly simple, and foolproof. I haven't burnt it once...yet! Give it a try and see what you think.... 

Ingredients:- 

4 Eggs
1 x Tub of Quark
3 Tablespoons of Fat Free Yogurt (I use Natural or Vanilla)
1 Teaspoon of Baking Powder
1 Teaspoon Vanilla Extract / Flavouring
4 Tablespoons of Sweetener
Handful of Raspberries and Strawberries (Chop the strawberries into small pieces)

Method:-

Separate the egg whites from the yokes for all four eggs and split into two different bowls.
In the bowl with the yokes add half of the tub of quark, sweetener, vanilla essence and the baking powder and whisk until creamy.
Whisk all of the egg whites until stiff and fold in to the yokes mixture bit by bit gentle.
Line a baking tray with greaseproof paper and spray with fry light to help keep the cake from sticking.
Pour the mixture out onto the tray and pop in oven (at around 170c) for about 10-15 minutes until golden brown.
Once baked remove the paper lining from underneath the cake gentle whilst still warm (but be careful not to do it straight from the oven)
Lay on a cooling rack and allow to cool down for at least 15 minutes.
Mix the remaining quark and yogurt together and add a sprinkling of sweetener.
Spread the mixture on top of the cake ensuring a nice thick layer, go right to edges of the cake.
Layer the fruit on top of the quark mixture and gentle roll the cake up into a roulade.
Cut into pieces to share or save for later...alternatively grab a fork and stuff the lot!!! (Please note: I wouldn't recommend eating the whole lot in one go of course...:)

Diet Coke Chicken - Slimming World Recipe

The infamous Diet Coke Chicken made famous by Slimming World and loved by many dieters around the country. I first found out about this recipe via a lady at my local slimming world group a few years back. I tried it and loved it...so here is my slight adaption of the recipe.  

Ingredient's:-
 
Diced / Sliced Chicken Breast (Enough to feed 4) 
Fry light 
3 x Bell Peppers (I use Red, Yellow and Orange)
1 Red Onion, finely chopped
2 Garlic Cloves (chopped finely) 
2 tsp Worcestershire sauce
4 tbsp tomato purée
1 Carton of Passata 
1 tbsp soy sauce
1 tsp dried mixed herbs
Can of Diet Coke or Pepsi (330ml)
Chicken or Vegetable Stock Cube
Sweetcorn (optional but tasty!)


Method:-

Spray a large pan or wok with fry light and set to a high heat. Add the chicken and cook for a few minutes before adding the onions and peppers to brown and soften slightly.
Now add the liquid; passata, tomato puree, soy sauce, Worcestershire sauce and the can of diet coke of course!
Stir thoroughly and add the herbs, garlic and stock cube (crumble this up before adding) and give another good stir.
Bring the mixture to the boil then reduce the heat to a medium setting and cover. Let simmer for about 20 minutes, checking every 5 minutes of so. Continue to simmer until mixture has thickened (sometimes this can take up to 30 mins).
Add the sweetcorn once mixture has thickened and cook for another 2 minutes.
Serve with boiled rice or on top of a Jacket Potato.

This is suitable for freezing, but for best results make sure thoroughly defrosted before reheating again.
